Roasted Tomato Soup

Hearty Roasted Tomato Soup is the perfect winter dish. It’s packed with vitamins and fiber! The caramelized onions are what makes this dish incredible. The deep sweetness helps bring out the bright acidity of the tomatoes. Fresh herbs are always preferred, but I forgot to snag some while I was out. Dried herbs work in a pinch, just remember that the oils in dried herbs are more concentrated, so less is more.

3 lbs fresh Tomatoes; halved2 Tablespoons Olive Oil1 medium Onion; sliced2 bulbs Garlic1 Tablespoon dried Basil1 Tablespoon Italian Herbs1 Bay Leaf3 cups Turkey Broth1 cup Heavy Cream

Salt and Pepper to taste
